Zhoug combines pickled shifka chillies (an heirloom variety, originally from Bulgaria, popular in Israeli cuisine), green chillies, garlic, cumin, salt, pepper and extra virgin olive oil, with generous amounts of fresh coriander and parsley to elevate the flavour.
