In February 2014, restaurateur Jason M Jones and his team visited Le Relais de l’Entrecôte in Porte Maillot, Paris, which was to become the inspiration behind his South Yarra establishment Entrecôte Parisian Steakhouse. Through countless recipe changes and taste testing, the team perfected their own version of the famous French sauce. Many say the Melbourne version is even better. The Entrecôte signature ‘Steak frites’ of pasture fed Cape Grim Angus porterhouse comes swimming in the herbaceous butter sauce along with bottomless frites which you can douse to your hearts desire.
This Entrecôte sauce has become one of Melbourne’s best kept secrets, with 19 ingredients put together with precise ratios. It was never intended for this sauce to be sold as retail, but it’s now one of COVID-19’s silver linings. The pivot has come along with Entrecôte transforming their front bar into ‘Entrecôte Corner Store’ selling boutique French goods as well as local groceries. The sauce first made an appearance in Melbourne homes when the restaurant launched their ‘Entrecôte at Home’ experience and due to popular demand, both customers and boutique grocery stores were requesting to stock the Secret Herb Butter Sauce.
