
Greek Lentil Salad
Ingredients
1 pnt cherry tomatoes, cut in half
1/2 carrot, grated
1/2 red capsicum, chopped
1 rib celery, chopped
2 tablespoon parsley, chopped
2 Tbs Lilliput capers
1 400g can lentils drained and rinsed, or
1 cup dried lentils, cooked
1/2 tsp dried oregano
Salt + pepper to taste
Black sesame seeds for decoration (as pictured)
1/2 Red onion, chopped finely (optional)
150g Feta (optional)
8 Kalamata Olives, chopped (optional)
Dressing
1 tbs red or white wine vinegar
2 tbs EVOO
1 tsp Dijon mustard (optional)
1 tsp honey (optional)
1-2 garlic cloves, crushed (optional)
