Ionian Lentil Salad
Ingredients
- 1 pnt cherry tomatoes, cut in half
- 1/2 carrot, grated
- 1/2 red capsicum, chopped
- 1 rib celery, chopped
- 2 tablespoon parsley, chopped
- 2 Tbs Lilliput capers
- 1 400g can lentils drained and rinsed, or 1 cup dried lentils, cooked
- 1/2 tsp dried oregano
- Salt + pepper to taste
- Black sesame seeds for decoration (as pictured)
- 1/2 Red onion, chopped finely (optional)
- 150g Feta (optional)
- 8 Kalamata Olives, chopped (optional)
Dressing
- 1 tbs red or white wine vinegar
- 2 tbs EVOO
- 1 tsp Dijon mustard (optional)
- 1 tsp honey (optional)
- 1-2 garlic cloves, crushed (optional)
