Bouyiourdi is a simple yet incredibly flavorful dish made with tomatoes, green capsicum, chili, Greek feta, oregano, and extra virgin olive oil β€” all the ingredients we love!

This easy, delicious recipe hails from Thessaloniki in northern Greece. I only recently discovered it through my friend Christine from Kali Orexi, who documented it for our mutual friend Maria Tsalkos Magical Sunset.

As with many traditional dishes, there are different versions of Bouyiourdi. Some people like to add parsley, olives, or even onions. I sometimes use a mix of tomatoes β€” including cherry or Roma varieties β€” for added texture and sweetness.
