From Basque with Love Tuscan Risotto
Arborio rice, porcini mushrooms, garlic, shallots, salt, our secret blend of Italian spices and love.
Heat 1 tbs of olive oil over medium heat, add 1 cup of rice and fry for 1 minute. Turn the heat to low and add 1/3 cup of white wine stirring constantly until wine has evaporated, add 1/2 cup of water and continue stirring until evaporated, repeat adding 1/2 cup of water and as soon as rice is al dente stir in butter and parmesan to taste and serve immediately. Serve on its own or as an accompaniment to meat or fish. Seriously delicious mixed with grilled mushrooms and chicken.
